Den Kanaken schiebt man Sitten und Riten zu wie einen Schwarzen Peter. Von außen betrachtet kommen sie nur als amophe Masse von Lumpenproletariern vor, die man an Äußerlichkeiten und „spezifischen Eigenarten“ zu erkennen glaubt. Auch wenn sie zu einer endgültigen Entscheidung gezwungen würden, die Kanaken suchen keine kulturelle Verankerung. Sie möchten sich weder im Supermarkt der Identitäten bedienen, noch in einer egalitären Herde von Heimatvertriebenen aufgehen. Sie haben eine eigene innere Prägung und ganz klare Vorstellungen von Selbstbestimmung. Sie bilden die eigentliche Generation X, der Individuation und Ontogenese verweigert worden sind.
Längst haben sie einen Untergrund-Kodex entwickelt und sprechen einen eigenen Jargon: die „Kanak-Sprak“, eine Art Creol oder Rotwelsch mit geheimen Codes und Zeichen. Ihr Reden ist dem Free-Style-Sermon im Rap verwandt, dort wie hier spricht man aus einer Pose heraus. Diese Sprache entscheidet über die Existenz. Seen from without they just look like an amorphous mass of Marx and Engel’s so-called “social scum”, which people think they can identify by outward appearances and “distinguishing features.” Even when forced to decide once and for all, Kanakes don’t look for any cultural anchorage. They have no wish to help themselves in the identity supermarket any more than to be absorbed into a homogenous flock of the displaced and the dispossessed. They have long developed an underground codex and now a “Kanak mouths back” in his own argot: “Kanak-speak”, a sort of créole or gangster slang with secret codes and signs. Their speech is kindred to a Freestyle Rap Sermon: in both cases, speech is all part of an act. This language determines their existence. They give an out and out personal performance in words.

We are now standing the mash house, where the first stage of whiskey production takes place.
Whiskey is made up of three ingredients:
1. First of all: water. Our water comes from a unique, local source. We have our own water reservoir here on site. You can see it from the parking lot.
2. Secondly, distiller's yeast. This is imported.
3. Thirdly, malted barley, also called "malt". "Malt" is barley that has germinated in water and been dried with hot air. This process produces malted sugars which will later become alcohol. In Scotland, peat fires are often used to dry the barley. This leads to an especially smokey taste due to the burnt peat. In Ireland we simply dry the barley with hot air for a smoother taste.
On my left (your right) you will see the old Mash Tun made of copper and iron. It was in use from the 60s (sixties) right up until the beginning of 2007 (two thousand and seven). We now have a new Mash Tun made of stainless steel, which is much larger and more efficient, as it is self-cleaning.
To make the mash we use 10 (ten) tonnes of malted barley and add water to this three times, 24,000 (twenty-four thousand) liters each time. During the first wash, the water is heated to 65 (sixty-five) degrees. The whole mixture is slowly stirred once and then left to sit for about 35 (thirty-five) minutes, while the sugars in the malted barley dissolve into the water. The second time we heat the water to 77 (seventy-seven) degrees, in order to extract even more sugar from the barley. Finally, we mix the solution with water heated to 86 (eighty-six) degrees, in order to extract the very last remaining sugars.
This liquid will be kept for the next mash. The whole process lasts around 6.5 (six and a half) hours in total. In the end, we will have produced 48,000 (forty-eight thousand) liters of a liquid rich in sugars which we call "wort". We then pump this "wort" into other vessels for fermentation. The remaining malt is sold to nearby farmers as cattle fodder.

Schottland verwenden Sie oft Torffeuer, um die Gerste zu trocknen. Das Verbrennen des Torfes führt zu einem besonders rauchigen Geschmack. In Irland trocknen wir die Gerste einfach mit heißer Luft für ein reineres Aroma.

Diese Flüssigkeit wird für das nächste Maischverfahren behalten. Der ganze Prozess dauert insgesamt etwa 6,5 (sechs ein halb) Stunden. Am Ende entstehen 48.000 (achtundvierzigtausend) Liter zuckerreiche Flüssigkeit, die wir „Würze“ nennen. Wir pumpen diese „Würze“ in andere Bottiche für die Gärung um. Das übrige Malz verkaufen wir an die Bauern in der Nähe als Futter für das Vieh.

This room is known as the "Mash House", and this is where the first stage of whiskey production takes place. We produce our whiskey using three ingredients:
1. Water, which comes from our own unique source. The water is of essential importance because it lends the whiskey the "taste" of the ground over which it runs. In this case, volcanic soils rich in minerals.
We store our water in a reservoir, which you can see from the parking lot if you look in the direction of the distillery.
2. Yeast. We buy distiller's yeast produced especially for whiskey making.
3. Malted barley. "Malting" consists of soaking the barley in water so that is germinates. This process turns the starch found inside the grain into sugars. These sugars, and not the grain itself, are what interest us for whiskey making.
Once soaked, the grain is dried. In Scotland, peat fires are often used to dry the barley which explains the smokey taste frequently found in Scottish whiskys. In Ireland, however, we simply dry the barley with hot air for a smoother taste.
The first step in the process is called "mashing". When we "mash" we mix water and malted barley (grist) in a tun known as the "Mash Tun".
On my left you will see the old Mash Tun made of copper and iron. It was in use for forty years from the sixties right up until the beginning of 2007 (two thousand and seven). We now have a new Mash Tun made of stainless steel, which you will see in just a moment.
Here is our new mash tun. If you look through the window, you will get an idea of how it works. The new tun is more efficient, larger and what's more it is self-cleaning.
The purpose of mashing is to extract all of the sugars from the barley. To do this we add 24,000 (twenty-four thousand) liters of water to 10 (ten) tonnes of barley at a temperature of around 65 (sixty-five) degrees.
The barley is steeped for around 35 (thirty-five) minute and a mechanical arm slowly stirs the whole mixture once. This enables the sugar in the barley to dissolve into the water.
We then extract a sugary liquid called "wort". Next, in order to extract even more sugar, we add 24,000 (twenty-four thousand) liters of water a second time, this time at 77 (seventy-seven) degrees. We repeat the whole process a third time at 86 (eighty-six) degrees. This third extraction only contains a small amount of sugar and is kept back in order to be reused for the next mash.
The mashing process lasts around 6.5 (six and a half) hours in total. The "wort" that is produced in the first two steps, 48,000 (forty-eight thousand) liters in all, is pumped into another vessel where fermentation takes place.
The barley remaining in the mash tun is rich in protein and fiber and is sold to farmers as cattle fodder.

La première étape de l’élaboration s’appelle « le brassage » : un processus selon lequel on mélange l’eau et l’orge maltée (le grist) dans une cuve appelée « The Mash Tun » que l’on pourrait traduire par la cuve de brassage.

Le brassage dure à peu près 6,5 (six heures et demie). Le « moût » qui est produit par les deux premières étapes, 48.000 (quarante-huit milles) litres au total, est transvasé dans une autre cuve dans laquelle aura lieu la fermentation.
