I was thinking of "Genomzerfall" oder "Genomzerstörung", aber beides googelt sich schlecht.
Brewer’s yeast has also lost the ability to survive in the wild like their non-domesticated cousins do, for instance, on the surface of fruit. This is not the case for wine yeast, which has undergone less change compared to its wild relatives. Domestication is evident on a genetic level, for example, through an increase in *genome decay*, rearranged chromosomes, gene duplications and polyploidy. To clarify polyploidy, human sperm and egg cells are haploid, meaning they possess a single set of chromosomes.

Verfall des Erbguts
Mit *genome decay* sind die Veränderungen im Genom (also Erbgut) gemeint, die im Zuge der Evolution durch das Wegfallen oder die Inaktivierung von Genen vor sich gehen. Das Erbgut zerfällt also in seiner ursprünglichen Form, da Gene mutieren, inaktiv werden, "gelöscht" werden, etc. Soweit ich das erkennen konnte, ist das aber eben kein feststehender Begriff, sondern eher eine Beschreibung des Vorgangs.
*Zerfall des Erbguts* ginge ebenso, aber ich persönlich bevorzuge den Klang der ersten Version.
