La maduración del melón cantaloupe Guerrero se manifiesta por pequeñas grietas que aparecen en la base de los pedúnculos y al realizar una ligera presión sobre el cuello de éste desprendiendo fácilmente. Además el fruto empieza a adquirir parcialmente un color amarillo dorado. Se deberá poner muy especial atención porque al inicio de cosecha los demás cortes son muy consecutivos al primero (un corte por día).

Encerado y Desinfección de la fruta.
El encerado tiene como finalidad, mantener la dureza del fruto al impedir la deshidratación del mismo, y a su vez es portador del producto desinfectante.
Consideraciones Especiales.
El rápido enfriamiento inmediatamente después de la cosecha es esencial para conservar la calidad optima post cosecha. El punto final de enfriamiento es comúnmente 10°C pero 4°C es mas deseable. El enfriamiento con aire forzado es la práctica más común, aunque el hidroenfriamento también se puede utilizar.

I think that this may be what they mean here, since the text refers specifically to cantaloupes. One of the characteristics of cantaloupes or other kinds of muskmelons is that when they are ripe, they do pick very easily, or "al realizar una ligera presión sobre el cuello de éste desprendiendo fácilmente," as the Spanish text provided by Rafael Martilotti says, and this is what horticulturalists call "full slip" or "vine slip", as the ripe fruit "slips" from the stem.
