* los "huevos estrellados" es un "revuelto de huevos y papas". SIEMPRE incluyen papa / patata y aunque las recetas difieran levemente, luego de agregarse los huevos, se revuelve todo. Los \"huevos estrellados\" son una receta típica y se hace frien do (dos) patatas, reservándolas, luego friendo (dos ) huevos en la forma tradicional, y finalmente colocando sobre ellos las patats y revolviendo todo. Así que no EXISTE un equivalente....so...it´s your choice....

I just ran into the same problem and am opting to leave it in Spanish with the explanation in English in brackets. I believe that huevos estrellados are both fried AND scrambled and in many places they add chorizo which I opt to leave out.
