This will be to attempt to reduce the Game’s carbon footprint but also to accommodate many of the vegan athletes who will compete, and vegan spectators who will attend. To achieve this, 33% of the food in the Athletes’ Village restaurant will be plant-based, along with 60% of the snacking offer for the general public and 50% of the food for the workforce. Olympic Village eateries will offer vegan options, including quinoa salads and falafels. The organisers are aiming to reduce the overall carbon footprint of the event by 50%.
